Green Salad With Roasted Carrots and Creamy Tarragon Dressing

Heading to a friends place for a festive lunch or dinner and you’ve been asked to bring a salad?

Need something super simple, quick to make with only a few ingredients, BUT…it can’t be boring right? 

Don’t panic…

We have the perfect recipe for you!

Impress your friends with a twist to the average ‘Green Salad’ and give this a go, we think it will become one of your favs!

 

INGREDIENTS

500g small, thin carrots, trimmed and halved lengthwise, if large

1 tbsp. olive oil

Salt and freshly ground pepper

1/4 c. sour cream

1 tbsp finely chopped fresh tarragon, plus more for garnish

2 tbsp milk

1 tbsp fresh lemon juice

1 tbsp mayonnaise 

1 tsp Dijon mustard

4 small heads lettuce, leaves separated and torn

 

 

DIRECTIONS

  • Preheat oven to 220°C. Toss together carrots and oil on a large baking tray. Season with salt and pepper. Roast, tossing once, until golden brown and tender, 15 to 20 minutes.
  •  Meanwhile, whisk together sour cream, tarragon, milk, lemon juice, mayonnaise, and mustard in a serving bowl. Season with salt and pepper.
  • Transfer 4 tablespoons dressing to another bowl; reserve.
  • Add lettuce to serving bowl and toss to coat. Top with carrots and drizzle with reserved dressing. Garnish with additional tarragon.
