Healthy Raspberry Oat And Applesauce Muffins

Raspberries are in season right now so make the most of these little berries with BIG health benefits! Raspberries are low in calories but high in fiber, vitamins, minerals and antioxidants. Raspberries are easy to add to your diet and make a tasty addition to breakfast, lunch, dinner or dessert.

This raspberry oat and applesauce muffin recipe using healthy ingredients will satisfy your sweet tooth and give you the energy you need to crush your workouts and your day.

Preheat your oven to 180ºC. Line a 12-cup muffin tin with muffin cups.

In a medium bowl, stir together the rolled oats, applesauce, milk, egg, vanilla, coconut oil and sugar.

Next, in a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. Pour in the applesauce mixture and stir, then mix in the raspberries until just combined.

Spoon the batter into the muffin cups, then bake for 18 - 20 minutes or until a toothpick inserted in the centre comes out clean. Don’t over bake or the muffins will be dry.

Remove the muffins and let cool completely. Store in the fridge or the freezer. ENJOY!
