Green Salad With Roasted Carrots And Creamy Tarragon Dressing

Heading to a friends place for a festive lunch or dinner and you've been asked to bring a salad?

Need something super simple, quick to make, with only a few ingredients, BUT... it can't be boring right?

Impress your friends with a twist to the average 'Green Salad' and give this a go, we think it will become one of your favs!

Preheat oven to 220°C. Toss together carrots and oil on a large baking tray. Season with salt and pepper. Roast, tossing once, until golden brown and tender, 15 to 20 minutes.

Meanwhile, whisk together sour cream, tarragon, milk, lemon juice, mayonnaise, and mustard in a serving bowl. Season with salt and pepper.

Transfer 4 tbsps dressing to another bowl; reserve.

Add lettuce to serving bowl and toss to coat. Top with carrots and drizzle with reserved dressing. Garnish with additional tarragon.
